2 Months Old

Kennedy Joy:

You are 2 months old today and it is SO fun to see you learning new things every day! 

-Your smile is the BEST thing. You often have a pretty serious expression with a furrowed brow, you can be pretty intense. But when you smile and your face relaxes, we soak up  every second! Every morning after you eat, there is a 15 minute HAPPY TIME where I get the best smiles and can't stop taking pictures (sorry everyone on instagram...i know it gets ridiculous)

-You make the BEST faces...are so expressive! It cracks me up!
-You are drooling ALL the time, and constantly trying to suck on anything, mostly your wrist or hand (you still can't find your thumb), rarely your paci, sometimes our arm or your burp cloth or whatever is closest to you.
-You spit up what seems to be MOST of your meal. What's the deal with that?
-Your head control is so good! When we put you on your tummy, you are pushing yourself up to see everything around you. (We are working on that arm strength already!)

-You scooch around whenever we lay you down. At night when we put you in your crib, you always end up in a complete circle or in the opposite corner. We always laugh at the positions we find you in.
-You LOVE to kick and use your legs! Standing (with assistance) is your new favorite thing and you are so strong. We put you on the nap nanny on your tummy so you can push up to a standing position and look over the edge. When we hold onto your fingers you can stand for a long time! I have a feeling you will be up and moving sooner than later.

-You are a pro eater, and eat about 3-4oz every 2.5 hours during the day.
-You are also a pro sleeper. Everyone is jealous. Although it still takes us 3 or more tries to get you down and asleep at night, you sleep between 9-11 hours pretty consistently! It. Is. Awesome. We try to put you down at 8, but usually it is 10pm before you are down for the night.

-Your naps are still inconsistent throughout the day. Sometimes they are cat naps, sometimes you are out for 3 hours!
-You love to go jogging with your mom and it often puts you to sleep.
-Your 91 year old great grandmother came to visit you for the first time(the day before she fell & broke her pelvis in 2 places)

-You also met your aunt Leslie for the first time!

-You LOVE when your dad gets home from work! You love when he holds you, and he is the best at putting you to bed.

-You are 23 inches long and in the 94th percentile for length, 11 lbs 12oz and in the 90th percentile for weight, and the 86th percentile for your head size. Pretty proportional, way to go. I won't comment on your weight because you are a girl, and may be sensitive about it : ) but you are already too long for a few of your 0-3 month clothes!

As for what's up with me- I really think I injured my lower back from holding my child. (You did see her weight, right?) She so often cries during the day unless she is HELD, and doesn't often let me even sit down with her (unless she falls asleep on me). So I have to stand and walk around, and I guess I lean back so she can rest on my chest. Anyway, I think that is why my back is killing me...I've had so many weird body aches since having her. Arms from holding her wrong well breast-feeding, upper back from pushing her in the jogging stroller, now lower back...No one prepared me for all of the post-pregnancy pain ; )

I have been running more since week 6 now that I have been cleared by the doctor. It is great because it gets us outside, puts her to sleep when she has been fussy, and gives me time to just think & be! But I have this nerve problem in my right foot, which is becoming a real issue. So pray for that to disappear.

Other than those 2 complaints, we are doing GREAT as a family as Kent gets into the swing of school and we learn more and more how to be intentional with each other and enjoy each stage with our daughter. God is GOOD...all the time!

Bake this Now!

  This isn't a baby update post but of COURSE I have to post the latest pics of my little preshy!

She got her vaccines this past week, 3 shots! She was so brave! Cried for a couple minutes and then just needed to be snuggled the rest of the night. The next day she slept ALL DAY...I guess it was quite a traumatic experience for her. 

Some of you have seen my posts about her lengthy sleeping stretches at night. You'll be happy to know (those who were jealous) that it hasn't continued, lately, at least. She has reverted to one middle of the night feeding again. (Maybe a growth spurt?) I'll update more one KJ on her 2 month birthday. 

Now...the reason for the post. My 2 newest favorite sweet treats. (And if you know me, you know I love my sweets!) Of course I TRY To keep it healthy to make me feel better about the number of sweets I eat. These recipes are (to me) as good as a non-healthy sweets, which gets me pretty pumped! So give them a try and tell me if you agree.

Banana Oat Cookies (THE BOMB!)
I found these here
and made a FEW adjustments

You need:
1/2 cup banana (one small ripe banana)
1/3 cup olive oil
1 egg (or a flax egg=1 Tbs flax ground seed and 2.5 Tbs water set for 5 minutes)
1/2 cup brown sugar ( can use less if you load up the chocolate chips-it's pretty sweet!)
1 tsp vanilla
1 cup oat flour (or 1 cup oats, for a chewier cookie)
1 cup whole wheat pastry flour
1/2 tsp baking soda
1/4 tsp salt
1 cup dark chocolate chips (this is a lot...you can do less)
1/2 cup walnuts (optional)

1. Preheat the oven to 350°. Grease the cookie sheet (or use parchment paper)
2. Mix together the flour, baking soda, and salt; set aside. In another bowl, mix the olive oil, brown sugar, vanilla, egg, and mashed banana.
3. Then, add in the dry ingredients and mix until blended.
4. Stir in the dark chocolate chips! (And walnuts, if you like.) Drop dough one spoonful at a time onto the cookie sheets with some space between them.

5. Bake about 10 minutes until the edges look a little crisp. They are especially DELISH just out of the oven! Here are mine.

Next delicious sweet treat is fromTHIS site:

(Makes 1 huge serving)
1/4 tsp pure vanilla extract
scant 1/16 tsp salt (don’t omit)
sweetener (such as 1 stevia packet or 1 tbsp sugar)
1/2 tbsp sprinkles
1 cup almond milk (I JUST tried this for the first time...SO good! I got the vanilla kind) 
OR canned coconut milk (*See below for substitution notes.)
 1/4 tsp butter extract (Don't leave this out!)

Mix the ingredients together in 1 or 2 shallow plastic containers. Freeze. (You can also use an ice cube tray.) Once frozen, pop the blocks out of the container (I thaw for 30 seconds in the microwave first) and blend in your blender. The website says use a Vita-Mix which I don't have so I used my blender and it comes out more like a milkshake. But OH MAN is this good!
*If you just use your normal milk, 1% or skim, it will still be good but maybe add 1/4 cup of the coconut milk or even 1/4 c of vanilla creamer if you have it to give it a richer taste
